Chia Porridge.

Sick of eggs for breakfast!?

This delicious chia porridge can be served hot or cold (I love it cold!). Paleo, GF and DF

2/3 cup raw cashews. (soaked for 2-3 hours)

1 cup coconut cream and 1/2 cup water

1/2 teasp cinnamon

1 teasp vanilla

Served here layered with berries and walnuts.

Method.

Soak 2/3 cup raw cashews in water for a few hours. Whiz in a thermom or food processor  until fine. Added 1 cup coconut cream and 1/2 cup water, 1/2 teasp cinnamon and 1 teasp vanilla. Whiz again and then stir through 1/3 cup chia seeds. Chill in fridge.

I love to double the batch. It might go kinda gluggy after a day or two in the fridge and if so just add some more water.

** For a slight change add raspberries to the thermomix/food processor and the porridge will be a delicious red colour!
